Zucchini Fritter with Spinach, Avocado, Feta & Mircogreens.

A simple quick lunch, packed with greens and added goodness of microgreens!

Ingredients
1/3 cup buckwheat flour

1 zucchini (grated)
1 spring onion
1 egg
Salt + pepper
Olive oil

Toppings: Avocado, raddish, microgreens, fet, relish and baby spinach.

Instructions


1. To a bowl add grated zucchini, flour, roughly chopped spring onion, lightly whisked egg. Mix together and season with salt and pepper.

2. Heat a pan, drizzle with olive oil to prevent fritter mixture sticking. Add mixture to pan and spread into a large circle. Cook until underside is golden and crisp (3-5 minutes), flip fritter and cook other side. Remove from the pan and plate.

3. Top fritter with your favourite relish, handful fresh spinach, 1/4 avocado sliced, crumble over feta and finish with thinly sliced radishes and fresh sugar snap pea microgreens.
